I absolutely LOVE talking about inspiration, artists that influenced other artists and things like that. It's always interesting to learn more about the thought process behind the work you loved, even more so if it was influenced by someone you find to be inspirational as well. Also I'd ask how often do they look through their old works and if they ever go back to them. I personally like making videos with pictures taken throughout the year to watch them later, so I'd love to know if my favorite photographers do the same to track their progress or to see how their works evolved over time.

The most important question for me is always how they understand portrait retouching, because there are people who edit your pictures pretty realistically and even teeth whitening or glare removal look authentic, and then there are photographers who would turn your face into a mask with their editing. Sometimes it's impossible to tell from their portfolio if they do so, because you never got to see the original, but when it's you it would be clear you look way too plastic. So yeah, discussing what you don't want them to do is important.
